Once you have mastered these, you will never want to buy scones again. The ones in the shop just don't compare to these. Why not make 2 batches and put some in the freezer?
I like my scones quite big, so this recipe gives me about 7 scones from a 6cm cutter. But if you want to make smaller ones, you might be able to get 10 from this.
Ingredients:
440g self-raising flour
1 teaspoon baking powder
100g butter (softened)
half a teaspoon of salt
90g white sugar
1 egg
Around 100ml milk
Mix the flour, baking powder, salt, sugar and butter with your fingers until you get fine crumbs. Then add the egg and bring the mixture together, either using the bread hook on your mixer, or with a spoon.
Start to add the milk until the mixture forms a dough. It is difficult to say how much milk you will need, but you may not need it all.
Don't handle the mixture too much. Roll it or squish the mixture down on a floured worktop and cut into rounds with the cookie cutter.
Glaze the top of each scone with some milk and bake for 15 minutes at 180 degrees.
