Fluffy American Pancakes

These pancakes are definitely not just for Pancake Day. When I was a kid, I used to have these toasted under the grill and covered in butter, but we called them Scotch Pancakes. I don’t know when their name changed, but I am happy to call them American Pancakes, as they remind me of my visits to America. The breakfasts there are just amazing! I used to have a stack of these pancakes with a fried egg and the crispiest bacon you have ever seen.


Ingredients for 2 portions:

2 tablespoons melted butter

135g plain flour

1 teaspoon baking powder

half teaspoon salt

2 tablespoons white sugar

130ml milk

1 large egg.


Measure the flour, baking powder, salt and sugar into a mixing bowl.


In another bowl, mix the egg with the milk and melted butter.

Then slowly pour this mixture into the the dry ingredient, constantly stirring so that the mixture doesn’t go lumpy.


Fry a large dessert spoon of mixture in some melted butter for a couple of minutes, and then flip it over to cook the other side. Don’t have the heat too high, or your butter will burn.


You can make these pancakes in advance and warm them by putting them in the toaster or wrap them in foil and put them in the oven.


Serve with fruit and honey, or a fried egg and bacon.
