Carrot & Orange Loaf Cake

You wouldn't think that carrots and oranges would go together, would you? But they do. I love this cake because of the delicious spices, as well as the orange zest. There is the most wonderful smell in the kitchen when you make this cake.

Ingredients:

150g margarine

200g self-raising flour + 1 teaspoon baking powder 150g dark brown sugar

175g peeled and grated carrots 2 eggs

1 tablespoon milk Half teaspoon mixed spice Zest of an orange

Topping:

Drizzle of honey

Juice of an orange

Start by being preparing, so peel the carrots and grate them and zest the orange. Keep the orange to one side, as you will need the juice later.


Whisk the margarine and the sugar together until all the sugar has been combined. Then add the eggs and whisk again. Finally, add all the other ingredients. Mix well and bake in a loaf tin which is lined with baking paper for 50 minutes at 180 degrees.

After 50 minutes, take the cake out of the oven, drizzle the top with honey and put it back for another 5 minutes, so that the honey sinks into the cake. When the cake is ready, pour the juice of half of the orange over the top of the cake.


Leave the cake to cool on a wire cooling rack.
