I used a rich, dark honey for my cake, which is why it is dark. But you can use any honey you like.
Ingredients:
100g margarine
225g self-raising flour
100g white sugar
225g bananas
2 large eggs
Zest of 1 lemon
6 tablespoons honey
Topping:
Drizzle of honey
Tablespoon of brown sugar
This cake is made differently to the usual sponge. It is just a different method.
Use the whisk or your fingertips to mix in the margarine with the flour and rub together until it resembles breadcrumbs, like when making the crumb cake.
Next, peel and mash 2 bananas and weigh the mixture to 225g. Then add this to the cake mixture.
Grate a lemon to get all the zest off and add this to the cake mix, and then add the sugar, eggs and honey. Whisk it well until all the ingredients are incorporated. This cake can be quite dense, so be careful and make sure that all the ingredients are properly mixed together.
Then bake in a loaf tin for 50 - 55 minutes at 180 degrees.
When the cake is ready, put it on a cooling tray and drizzle honey all over the top of the cake and then sprinkle a tablespoon of brown sugar over the honey. This will give you a lovely crispy, sweet topping.
