Baileys Cake

Definitely not one for the children! I found a miniature bottle of Baileys in the cupboard and it was just enough to make this cake. I know it isn't Christmas, but it's lockdown, so normal rules don't apply.



Ingredients:

112g baking margarine

112g white sugar

2 large eggs

117g self-raising flour

20g cocoa powder

½ teaspoon baking powder

2 tablespoons Baileys

Frosting:

190g icing sugar

60g butter

2 tablespoons Baileys

30g melted chocolate


If you wanted to make a large cake, you could double the mixture and make two sponges, then sandwich them together with the frosting. However, this is quite a rich cake and you can definitely taste the Baileys, so I think that one layer of it is enough, especially as you would probably serve this after dinner or at a party, with other food


To make the sponge, whisk the margarine and sugar together until fully combined. Then add the eggs and whisk again. Finally, add the flour, cocoa powder, baking powder and Baileys. Whisk together to make sure that all the dry ingredients are properly mixed in.

Bake in one 20cm tin, which has been lined with baking paper, for 25 minutes at 180 degrees. As this is quite a dense cake, it may need an extra 5 minutes, so check that it is cooked properly by inserting a skewer into the middle of the cake. If it comes out clean, it is done.


Let the cake cool in the tin for a few minutes and then carefully tip it out, take off the baking paper and let it finish cooling on a wire rack.


To make the frosting, mix the icing sugar, butter and Baileys together and whisk for at least 3 minutes, to get a light and fluffy frosting. Spoon this over the cake and swirl it around with the back of a knife, to get it to the edges of the cake. If you have better piping skills than me, then you can pipe it, which would look lovely.


Swirl melted chocolate over the top of the frosting. You can melt the chocolate in a bowl over a pan of simmering water, or you can melt it in the microwave for about 30 seconds, but just make sure that you stir it a few times, to avoid it burning.
